Chicken and Black Bean Recipe







Ingredients



  • 2 cups cooked, chopped chicken
  • 1 cup white onion, finely chopped
  • 1 lime, juiced
  • 1 tablespoon fresh garlic minced
  • 1 teaspoon hot sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups brown rice, uncooked
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 3/4 cup black beans, drained
  • two 4 ounce cans green chiles from can


Method

  1. Preheat oven to 180°C degrees.
  2. Heat cast frying pan over medium heat.
  3. Cook rice following the normal steps and set aside.
  4. Heat oil in skillet and when hot, add onion and garlic, stirring until softened for about 5 minutes.
  5. Stir in cooked rice, green chiles, black beans, cumin, lime juice, chicken and hot sauce.
  6. Top with cheeses and bake for about 18 minutes until cheese is melted.
  7. Better to Serve warm.
