Yummy Sausage Bake with Vegetables







Ingredients



  • 8 links sausage
  • 1 large red onion cut into small cubes
  • 1 tablespoon olive oil
  • 1 teaspoon of dried thyme
  • 2 large chopped bell peppers
  • 2 large red tomatoes cut into pieces
  • 3 cloves of chopped garlic
  • 500 grams of gold potatoes cut into small cubes
  • salt and pepper to taste


Method

  1. Preheat oven to 210 C degrees.
  2. Mix together: potatoes, bell peppers, tomatoes, chopped garlic, and red onion with one tablespoon olive oil salt and pepper in a large pot.
  3. Put the mixture in a large baking dish and place the sausage links on top.
  4. Sprinkle dried thyme over the dish.
  5. Cover with aluminium foil and bake for about 1 hour and 30 minutes.
  6. Remove baking dish from the oven and take off the aluminium foil.
  7. Mix vegetables around, and bake for an additional 25 minutes with turning the sausage on both sides until it takes a golden brown color.
  8. Serve it warm and enjoy.
