Ingredients
- 8 links sausage
- 1 large red onion cut into small cubes
- 1 tablespoon olive oil
- 1 teaspoon of dried thyme
- 2 large chopped bell peppers
- 2 large red tomatoes cut into pieces
- 3 cloves of chopped garlic
- 500 grams of gold potatoes cut into small cubes
- salt and pepper to taste
Method
- Preheat oven to 210 C degrees.
- Mix together: potatoes, bell peppers, tomatoes, chopped garlic, and red onion with one tablespoon olive oil salt and pepper in a large pot.
- Put the mixture in a large baking dish and place the sausage links on top.
- Sprinkle dried thyme over the dish.
- Cover with aluminium foil and bake for about 1 hour and 30 minutes.
- Remove baking dish from the oven and take off the aluminium foil.
- Mix vegetables around, and bake for an additional 25 minutes with turning the sausage on both sides until it takes a golden brown color.
- Serve it warm and enjoy.
